Our Story

IT BEGAN LIKE THIS…

We are a Farm Shop and Farm house consisting of Henrik and Gioanna (Mom and Dad) and our daughter, Helena. We are Danes but we have been living in the USA for many years and one day we decided to follow our dream and the wish for a healthier lifestyle, more in touch with nature and without today’s stress. This lifestyle we found in “la bella Toscana” in our Tuscan, rustic Olive Farm from 1790 with it’s adjoining plot of land in the Tuscan hills of approximately 350 meters above sea level. It’s from here we wanted to offer you our homegrown products.
We took over the Casale 3 Danesi farm in 2012. We produce our own hand crafted Extra Virgin Olive Oil here and we have approximately 400 trees in all sizes. We have 4 sorts of olives, Frantoio, Leccino, Maraiolo and Pandolino, all typical Tuscan sorts of Olives. Our Extra Virgin Olive oil consists of 80 % Frantoio,10 % Leccino and 10 % of Moraiolo and Pendolino.
We believe in Biological farming and the organic farming methods and we use no pesticide what so ever on our land. Our olives are hand picked and specifically selected in End October, early November in order to achieve a very aromatic, green and peppery Virgin Olive Oil.  Every day, during the harvest, we immediately bring the fresh olives to the mill for immediate milling, again to achieve the absolute best quality. On our Farm we also have a nice assortment of fruit trees, like pomegranate, plums, apples, apricots, peers, figs, blueberry, cherries, mandarins, citrus and orange trees. We are working hard on being able to  offer various marmalade’s and specialties from our farm directly to you.
Wine production is also on our wishlist, in 2015 we planted our small vineyard, which will be ready in 2020 to make our own 100 % Sangiovese red wine.
We have various herbs on the farm, rosemary, timian, lavender,  bay leaves, wild fennel, wild mint, lemon balm and lime blossom, made for various natural tee’s.

EXTRA VIRGIN OLIVE OIL PERFECTION

Key is to harvest early, and bring the days work to the olive mill within 4 hours, each afternoon. This is your guarantee that our Olive Oil is fresh, grassy and delicious!

How we work

WE HAVE 4 VARIETIES OF OLIVES

Our Olive trees grow at approximately 350 meters above sea level on terraced hills above the city of Uzzano.

PREPARING FOR THE HARVEST

In the early spring, our trees are pruned, branches are cut, and the trees are prepared for the spring flowers that bloom so nicely, and cross-pollination is done by our bee’s.

HARVESTING

Harvesting is done late October, or early November, in order to have the freshest, green smelling and tasting Virgin oil you can find.

ONE WEEK OF HARVESTING

On the week of harvesting, nets are placed below each tree, handheld electric or pneumatic harvesters are used to release the fruit from the trees and then collected immediately into 25 kg plastic bins. Each day all the bins are transported to the olive mill, making sure that milling is done within 4 hrs of the harvest time. This gives you the optimal product and the absolute best quality.

AT THE MILL

At the mill the olives are separated from the leaves, washed and crushed. Then churned, like pasta, for 1 hour under a constant temperature of 28 degrees Celsius, (Cold pressing). Then centrifuged and finally filtered.

AFTER MILLING

After the milling, we filter our Extra Virgin Olive oil an additional 28 times and then bottled in our 0.25 L or 0.5 L dark bottles. This ensures that no particles are left to settle in the bottle, giving a nice and clean product.
